Those who encountered Miss Johnson's Scandinavian recipes in the two cook-book inserts she did for House and Garden (Smorgasbord Cookbook and Traditional Swedish Cookies) will rejoice at finding an expanded cookbook, which includes the other four Scandinavian countries,-Norway, Denmark, Finland, Iceland. While certain dishes are common to most of them, and are not repeated, others provide variants in preparation, even in ingredients, but it will take an expert to do a comparative job. Sufficient to say that here are all the dishes one encounters in the various types of Smorgasbords; here too a generous selection of traditional and national favorites; here the specialties of the region- a wide choice of breads, cakes and cookies, of fish and shellfish dishes, of sandwiches-chiefly openfaced, of soups- which can be used for a first or last course. Within each national heading, the order is alphabetical, which almost precludes thinking of this as a basic cookbook. Designed for the collectors of specialty cookbooks- and the housewife desiring new variants on old favorites.
