KIRKUS REVIEW

A gastronomical guide through some fifty bistros will serve as a gourmet's handbook, whether on location- or back at home where approximately two recipes from each restaurant can be duplicated by the more skillful cook. Bistro by bistro, there are general remarks about the atmosphere and decor and nearby sites, on the clientele, on appropriate wines to go with these specialites de la maison, on prices, etc. The recipes-some are simpler- demand care but are explicitly explained..... An extra- for the more fastidious.
