Don't fly from a recipe to helplessly rattle an odd assortment of pots and pans; pare down your equipment to good, sound utensils and the authors will supply the recipe to fit the pan. Two skillets, saucepan, open baker or roaster, chicken fryer, casseroles and loaf pan have their own demands and rewards, and the recipes illustrate the dictum. (Unless you're a basting fool, watch out.) In any case, a good case, tasty dishes.
