100 SUMMER AND WINTER SOUPS

This is a cookbook which should be tried out before being reported. I found -- on going through the galley proofs -- recipes for soups I've tasted and liked, and not found in other recipe books. I found others that were totally unfamiliar, some sounded appetizing, some I'd be inclined to pass up. But on the whole this collection has one great advantage over the other soup cookbooks I know, that it is planned with rationing in mind, that short cuts to less extravagant methods are taken into consideration, and that variants on a number of basic soups are included. The arrangement seems unorthodox but perhaps in final form, it will prove practical.
