Useful book with lots of practical and tempting suggestions. The author not only gives numerous excellent recipes for meat substitutes, for ways of cooking rice, paste, legumes, eggs, vegetables, cheese dishes, etc. but she puts a good deal of emphasis on the importable of seasoning, sauces, gravies, and trimmings. Good value.
