Although the last vegetarian cookery book we covered(Highton's Home Book of Vegetarian Cookery- Roy- see p. 1207- issue 12/15/64) included many attractive recipes, the text was so interlarded with the morality of vegetarianism that it spoiled the appetite. Betty Wason's book has an introductory chapter summarizing the historical, religious and scientific aspects of the subject, and then goes on to as persuasive a lot of suggestions for vegetarian cookery as can be conceived. The nutritional facets are ably covered- the eye appeal, time saving aspects, and variety of choice, add up to an excellent general cookbook, confined to the vegetable kingdom, with eggs, rice and pastas, cheese and milk dishes, a wide range of salads, and a fairly representative choice of desserts to vary possible monotony. If the reader is not convinced that this is a basic cookbook, at least she will agree that it is an excellent supplement. Chapter headings.
