Does anyone still believe that today's assembly-line poultry has ""changed for the better in many ways""? Apparently, yes, despite the tragic tale told in The Chicken Book (1975). Truax' recipes are as problematical as her view of the hen's current cooped condition. Mixed in among the Sunday-dinner stuffed roast birds, the fricassees and herbed broilers are such mistakes as a chicken with prunes-and-tomato sauce casserole and a chicken coated in potato chips. Use, if at all, with caution and sparingly.
