For this, you'd better be rich. The von Welanetz Cooking School has a clientele of movie stars and celebrities, and their lavishly produced thematic dinners--A French Country Menu, A Tropical Feast From Hawaii, An Elegant Dinner Party in the New Orleans Manner--will wreck a family budget faster than you can say ""Oysters Rockefeller."" The dinners aren't always well-balanced (would you serve blueberry muffins and apple dumplings in the same meal?) and numerous recipes struck us as needlessly elaborate. Very attentive to visual display, the von Welanetzes suggest ""a carved rose made from a steamed beet."" The recipes are sumptuous, and the authors pay special attention to the logistics of meal-planning and dishes to ""make ahead."" For the would-be beautiful people.
