In the current mode, Shore's ""American"" kitchen draws on a world of sources. Her chicken dishes include cornish game hen with soy sauce and cilantro, chicken mole made with chiles and Mexican chocolate, chicken breasts with kielbasa ""à la Cordon Bleu,"" and Chinese chicken salad with rice noodles. The publishers have singled out for promotion her lamb couscous, which has you cooking the couscous in water for seven minutes--no way to get a proper, fluffy couscous. Overall, the book is just another of many new standard recipe collections, with much perfectly decent fare, aimed shrewdly at the middlebrow American cook who might be drawn to the name.
