There are certain minor details of this little volume which apply primarily to England's problems. But for the most part, this American edition should prove a useful handbook. The first half is a routine survey of basic principles of nutrition. The section devoted to findings of the war years gives fundamental principles of protective and non-protective foods, cooking, etc. Charts of foodstuffs indicate breakdown of nutritive values and a final chart suggests a key to substitutes.
