A meandering and agreeable menu cookbook, for those with a slight Continental bias and the inclination to patient toil before hostessing. There is no particular doctrine held forth here -- lamb may be anointed but the roast beef is bare. Lobsters are both poached in brew and then die a horrid death in a brandied skillet; there are tasteful vegetables and grand desserts. Mrs. Lewis is a former restaurateur and world traveler, and with the sobering assist of Miss Rugoff, this is a good ""prize"" collection. With a chatty autobiographical memoir by Mrs. Lewis.
