Jacqueline Heriteau's entry in the slow-cooker sweepstakes is one of the pleasanter products of a current craze; she candidly explains that ""The slow-pot can't do it all alone"" and that many dishes will require preliminary browning or last-minute gravy reduction for something beyond mere edibility. Her selection of recipes (from braised meats to soups, casseroles, and even breads and breakfast cereals) is broad and sensible but not especially inspiring. But her information about the idiosyncrasies of various slow-pot models is careful and detailed. This is one of the most appealing cases we've seen for an innovation which has patent virtues for things like corned beef, stewing cuts, or grains and legumes.
