Chefs' specialites de la maison from a number of select European restaurants have been brought together in one volume- which should serve for the American abroad as well as the more ambitious cook at home. Approximately a dozen dishes- from various sections of the menu- have been chosen to illustrate the best there is to eat or imitate from the finest (not necessarily the most obvious, or most expensive) restaurants in Paris and the Provinces, Italy, Spain, Belgium, Holland, Switzerland, Scandinavia, and the British Isles.
