This latest entry in the Knopf Cooks American series is an excellent advertisement for the food and cooking of the Northwest. Hibler, who grew up on the northern California coast, draws on the region's vital mix of ethnic groups (Native American; Italian; Vietnamese), its famous foodies (James Beard; Angelo Pellegrini), its local products (Walla Walla onions; the titular crabs), and institutions (the logging camp cook-house; Pike's market), and all those wonderful fruits and berries that she features in her extensive compilation of flavorful desserts. The fresh, clear, inviting recipes that result come with contextual anecdotes and memories along the pages' margins; they add a flavor of their own without competing with the main attraction. Not the first major Northwest cookbook in recent years, but probably the best.
