An exceptional cookbook with a great deal to offer, by a French-born woman who must combine a love of cuisine with a career.Her biggest selling point here is that everything (with some obvious exceptions like rillettes) is fast and easy. What's more, all the menus are governed by the principle of economy. But best of all, most important of all, along with shortcuts of the classics, Jeannette offers a lot of originals--developed on her own, or inherited from her mother, or duplicated from dishes she's enjoyed in those out-of-the-way bistros and cafes that committed good eaters spend their vacations pursuing. We especially recommend her soothing soups, homemade cheeses and fruit-based desserts which round the meal off without cloying or weighing you down. Her twenty family menus are light and balanced, often employing ground meat, fish, eggs or crepes, with solid vegetable courses and always a salad. The fifteen menus for entertaining are elegant, uncomplicated and inexpensive. There are also sections on planning a big bash and those ""challenging"" leftovers. The genuine article: good cooking from a good cook.
