Not all the flam-brule, urbane dishes here are ignited--the Caesar salad and other innocents are spared, but most flesh and flora get theirs eventually. Mr. Poister lets on how it's done, the utensils most helpful, when and where to blaze. A section of drinks for the flushed cook and guests is included. A special art, its true, but as a witty aid to the daring host, hardly a flash in the pan.
