Buried in the dazzling riches of color photography in which a quartered egg resembles a Georgia O'Keefe study, are some explicitly set forth recipes, simplified for the middle-brow gourmet. Again the processes and the more exotic ingredients are pictured and described. There is a glossary, index, and what have you, but alas, no list of suppliers for areas remote from Spanish-South American influence.
