An excellent addition to the International Cookbook Series, edited by Charlotte Adams, this is a translation of Czechoslovakia's best selling cookbook, a selection of 500 recipes adapted to American use. Provocative in its unusual features, this adds to the routine soup to dessert pattern. There are some soup accompaniments not found elsewhere, various types of dumplings and pancakes; numerous intriguing uses of cheaper cuts of meat and combinations of meats with other foods; good ideas for leftovers; difficult-to-find recipes for game; unusual vegetable and potato recipes, and so on. There are some helpful hints at the end on substitutes, sources, explanations of usages and definitions of terms. Cooking from home for those of Czech or Slovak background; a tasteful introduction for the uninitiated.
