This is a luxury item, for large and extravagant households, not for the average home. The technique of planning and serving formal dinners (also luncheons, suppers), with page after page of menus. There's a section called Pot Luck, which made me smile. Imagine having a ruffled grouse in the ice box? One on Beverages. Then, the last section seems a little more friendly, with recipes and menus built around eggs; salads; canapes and hor d'ceuvres. Even descending to clam bakes, (clam bakes de luxe, I assure you). Market very specialized. Might do for luxury restaurants, hotels, caterers, clubs -- as well as elaborate households.
