Just about as simplified as a responsible cookbook about Chinese food can get -- but the ""quick-stir-frying"" basic method, intelligently outlined here, may still offer obstacles to the average cook, skittish when it comes to blazing oil and flash cooking vegetables, pork, and seafood. However, this is a good starter manual since Mr. Lo sheds kindly light on those penultimate sauces and moves easily within the Western kitchen. With menus and a full array of dishes.
