Just about as simplified as a responsible cookbook about Chinese food can get -- but the ""quick-stir-frying"" basic method, intelligently outlined here, may still offer obstacles to the average cook, skittish when it comes to blazing oil and flash cooking vegetables, pork, and seafood.
