A quite useful and manageable cookbook of low calorie recipes which retain essential nutriments--vitamins, minerals and proteins--and deemphasize starches, fats, carbohydrates and low nutrient foods. A minimal amount of salt is used, and vitamin, mineral and protein content is supplied with each recipe. Most of the dishes are fairly simple to prepare and cooked with one process, while there is no frying or prolonged ""soaking"" cooking. Charts and tables and information on special diets are included. Since the emphasis is on nutrition, these generally attractive recipes will come in handy in the years ahead when the family bassinet has long since been banished to the laundry room.
