If you're in dead earnest about a low-cholesterol-fat regimen, Myra Waldo's book (see below) supplies much more extensive and firmer information, but this contains a good selection of straightforward, slightly herbal dishes, as well as desserts, breads and some ""foreign"" specialities. Needless to say, the cook should check key recipes for spices and salt which a doctor might restrict for cardiac or overweight patients. Some prepared ingredients are included (salad oil, instant mashed potatoes, margarine) but, as the author suggests, it's wise to check the labels.
