COAST TO COAST COOKERY

This is not going to prove a practical cookbook to use. As a stunt it has its merits; and there are- for those who dig- lots of provocative sounding recipes. But the main interest, it might seem, would be for those who collect regional folklore. Here-through the media of household editors of newspapers the country over- are representative dishes of regional significance. On these pages, for instance, the battle of the chowders is represented by all the different regional variations. Here the different versions of fried chicken- Maryland, Virginia and points south. Here hush puppies- as interpreted in different ways- and spoon bread- and various creole dishes. There are bits of local food lore, nationality origins and influences, the whole gamut of America's melting pot, expressed in foods. The arrangement is alphabetical-by state- and there is no attempt to make it a comprehensive cookbook. If you have enjoyed some local dish, check on the recipes from that area, and you'll probably find it. But don't use it as a basic cookbook.
