With introductory material on calories, a complete calorie chart, suggestions for menus, etc. -- the balance of the book shows how to prepare all types of dishes by replacing the most fattening ingredients with less fattening equivalents. Soups, vegetables, meats, salads and salad dressings, desserts, cakes and pies, snacks and sandwiches -- and the recipes sound good.
