KIRKUS REVIEW

I was put off by the title, which seemed to claim too much- and won back by the contents. For here ""with the co- operation of the world's greatest chefs, cooks and recipe makers"" Marvin Small has brought together an extraordinarily comprehensive assortment of great recipes from a wide selection of the best cookbooks. A quick look at the list of contributors picks up such names as Fannie Farmer, Irma Rombauer, Marion Flexner, Diane Lucas, Mildred Knopf, Antoinette Page, Stella Standard, Escoffier, Diat, M.F.K. Fisher. And a check on the restaurants ""tapped"" reveals that the Waldorf, Lindy's, Sardi's and Luchow's in New York, the Pump Room in Chicago, Antoine in New Orleans, Simpson's in London are among those that have yielded some gem. (One could quibble over omissions, to be sure, but why quibble when the results certainly compensate for none of us having space enough for all the cookbooks we want). From Appetizers to Beverages- with full meals and all courses in between, this offers practical, functional recipes for dishes that are world famous.
