It does not primarily emphasize substitutes as such, but through planning, marketing, and waste avoidance, the menus are built for variation and efficiency. First types of menus -- for various family meals, for low cost, for parties, for buffet, for quickly prepared dishes, then recipes for dishes mentioned in the menu-charts. Notice is taken of time and fuel needed for preparation, for simplicity in table service, for cutting down on the dishwashing. All in all a good bride's book and a handy, silent, kitchen helper.
