Egged on perhaps by a surfeit of Cheerios and milk, Mr. Marshall, the chef d'oeuf, presents a sizable collection of egg recipes, from simple to complicated, light to hearty. After some firm words about just what is a poached egg, and a siren song about the joys of en cocotte, the author offers dishes, main and incidental, sauces, omelettes and souffles, ""surprises,"" drinks, etc. Eggstravagant, useful.
