A truly tempting cook book has chosen a very generous number of dishes of European extraction and adapted them for American tastes and capabilities. There are pleasant, prefatory notes to each section- and a closing chapter on wines and cheeses- and in between a very large choice of hors d'oeuvres, fish- with and without sauces, chicken, specialties (canelloni, quiche, souffles, etc.), meats, egg dishes, salads and vegetables, and desserts. The recipes are all inviting-but not too difficult to duplicate- so that a book such as this is a challenge to any American kitchen to turn out a really elegant and enticing cuisine.
