CHICKEN AS YOU LIKE IT

Chicken is generally cheaper than most other meats, but after the roast, and summer chicken salad, with, alas, mayonnaise, what? This is a sensible, quite complete treatment of the bird a fine section on soups (a good basic recipe for chicken stock), ""simple"" chicken, classic roasts with various dressings, hearty chicken (flour-y things), ""tiny"" chickens (for the purposes of most Americans, Rock Cornish game hens), summery dishes with a group of marinades, chicken exotic and fancy (real exotic--real fancy). Recipes are easy to follow, explicit for the average cook. Coop scoop.
