An unspectacular collection of uncomplicated recipes using affordable fish--which, for Ackart, rules out all shellfish except clams and mussels as well as such ""piscatorial aristocrats"" as shad, true sole, swordfish, and fresh tuna. Among the recommended fish are bluefish, haddock, halibut, cod, pike, and canned tuna or salmon. These are variously baked, poached, steamed, fried, incorporated into quiches, loaves, macaroni casseroles, or chowder, or covered with a sauce such as pesto, Newburg, or marinara. Not exactly basic, with such odd trimmings as pineapple, cranberries, or bananas, it contains enough basic directions and no-nonsense suggestions for everyday consideration.
