For those whose depleted wallets forbid an in-person tour of New York's most expensive restaurants, the authors provide sample recipes from such celebrated wining and dining spots as Le Pavilion, Luchow's, The Russian Tea Room and The Forum of the Twelve Ceasars -- as well as some considerably more modest establishments. The emphasis is on ethnic diversity, from the Korean marinated cucumbers to a French seafood quiche to German pigs' knuckles and winekraut to a Scandinavian dried fruit soup. The recipes generally serve four to six and if you choose to dedicate each course to a different nationality your stomach will become the melting pot New York ain't.
