A doctor's wife, after her husband's coronary, converted her cooking, eliminated ""empty calories"", and established a way of life that was no deprivation. Powdered egg whites and skim milk, fat substitutes for butter and Crisco would scarcely make the regimen rigorous. Her cookbook is elegant, sometimes elaborate and always varied in its suggestions, as for example various pancake recipes for breakfast; ideas for hors d'oeuvres, soups, meats lean and measured portions, poultry, unlimited fish, even potatoes (it's the way they are prepared), vegetables, desserts which include cakes and pastries. There are suggested lunch and supper dishes, menus, charts, as well as general instructions on substitutions, etc. Diet made appetizing while confessedly time and care must be spent in preparation of these dishes.
