A majority of diabetics can ameliorate their illness, at least in part, through careful attention to their diet. This cookbook was designed to make that task more appealing and palatable. In addition to general guidelines and helpful menu and meal-planning lists, the book contains a variety of interesting recipes under each of the eight major sections--appetizers, breads and stuffings, entrees, salads, sauces, soups, vegetables, and desserts. Throughout, the ingredients used are readily available (including such convenience foods as frozen vegetables, canned salmon, prepared soups, and sauce mixes), and the instructions are brief and easy to follow. Clearly, one needn't be a gourmet chef to make these ""gourmet recipes."" Written by a diabetic and a doctor who specializes in the disease, this book is a valuable, upbeat addition to the cookbook collection in every diabetic's household.
