Wise and Hoffman were in on the founding of Chez Panisse in Berkeley; and Wise then opened Pig-by-the-Tail Charcuterie and produced the cookbook American Charcuterie (1986). Here they ride the trend back home, with an unpretentious but upto-date and cosmopolitan range of family and company meals. The recipes--from simple grilled marinated swordfish chunks to a more offbeat warm pork salad with soy sauce, Gorgonzola, and walnuts--are well thought out, well annotated, and often innovative. A worthy option, but inessential for libraries already overstocked with creative California cookbooks.
