Service-mag compendiums are much better than they were a few decades ago. If these 250 recipes are not all free of embarrassments like broiled asparagus sandwiches with a topping of blue cheese, minced onion, and whipped cream cheese, they are mostly satisfying enough to be preferable to some of the snazzier trade literature on the subject. Spinach soup, plain boiled oyster plant, barley pilaf with green peas, and pork chops simmered with apples and cabbage are some of the nicer indications of the way taste is evolving. Not to be consulted for the most authentic tabbouleh or pissaladiere, but not to be dismissed out of hand either.
