A very good middle-of-the-road vegetarian cookbook -- quite simple but imaginative withal. In addition to the main and side dishes (the author leans to continental treatment unlike Bernard Shaw's cook who creamed just about everything), there are familiar and fresh pasta and egg recipes, then some for soups, salads, breads and desserts. The directions are generally explicit and sensible and, if you care, there's a chapter on nutrition. Not quite pristine enough for purists (she uses frozen spinach in a soup with cucumbers and there is mention of liver in her nutrition section) but this is a sound guide for vegetarians fed up with soy beans and for omnivores who'd like a new way to deal with produce -- and meat prices.
