Part recipe collection, part introduction to Italian dished (risotto, polenta) and ingredients (cheeses, vegetables, garlic), this respectable miss contains several interesting, authentic recipes (a sort of pancake lasagna, for one), but the arrangement is inconvenient for finding recipes and only fitfully useful as a shopping guide. The mozzarella entry, for example, mistakenly relates the water buffalo to the American bison, which shares only the name. More important, Del Conte shows no awareness of the wide availability of fresh cows'-milk ""mutz"" in Italian America. An Italian now living in London, she has some knowledge and memories to offer those whose interest in Italian food can keep apace of the available material, but her ""pantry"" approach does not provide the edge she needs in an overcrowded market.
