The author not only gives numerous excellent recipes for meat substitutes, for ways of cooking rice, paste, legumes, eggs, vegetables, cheese dishes, etc. but she puts a good deal of emphasis on the importable of seasoning, sauces, gravies, and trimmings. Good value.
