THE WOMAN'S DAY BOOK OF GREAT SANDWICHES

Harris, author of The Woman's Day Book of Baking (1977), starts out here with a few bread recipes, adds some dressings, and then, for fillings, proceeds with the usual variety of standards, food editors' creations, and translations from non-sandwich dishes. (Thus we have a ""Tuna Salade Nicoise"" sandwich, hamburger ""Stroganov-Style,"" and a ""pizza burger"" on English muffin.) The least interesting pickings are in the ""Hamburger"" chapter, which also includes frankfurters and fish. (""Cook the fish following package directions,"" begins one recipe.) The likeliest possibilities are probably to be found among the international (falafel, souvlaki, burritos, etc.) and American regional specialties (Baltimore crab cakes, New York Reuben, New Orleans ""loaf"" of oysters deep-fried in cornmeal). But it's an unexceptional if not superfluous collection, geared to those who haven't time to cook or to seek out ethnic and regional recipes in ethnic and regional cookbooks.
