Since the enormous success of his The Doctor's Quick Weight-Loss Diet (seven million copies printed since 1967) Dr. Stillman has weighed in as champ of home pound-paring, and this cookbook presents recipes and menus for three diets. The first section tells you what can be done with all that fish, meat, eggs, and cheese in those intervals between acquiring and parting with the per diem requirement of 64-80 oz. of water. For those who remember only the essentials of the Quick Loss diet -- you may now use spices, condiments (like ketchup, cocktail sauce, etc.), some alcohol if cooked away, no-sugar gelatin, and -- surprisingly -- franks and knackwurst. The recipes are simple and varied -- ""fry"" in bouillon for example -- and if you shy away from artificial sweeteners, there are still some attractive dishes. Other sections offer recipes and menus for the ""Inches-Off"" regimen (low protein) and ""Stay-Slim"" diet (calorie counting). With introductory guidelines, caloric table, cooking tips, and forthright tub-thumping which Dr. Stillman, a once and certainly future fixture on the talk shows, does so ingratiatingly. Instant high-gross intake assured.
