The very latest on the human body's nutritional needs, arranged by individual nutrient: for consciousness-raising, not as a day-to-day guide. Null, a radio and TV personality (The New Vegetarian, The New Vegetarian Cookbook), explains each of the five categories of nutrients--protein, carbohydrates, lipids (fats), vitamins and minerals--and offers strong opinions in every area. On protein especially, Null argues long and hard for vegetarian fare: ""a balanced, nutritionally unsurpassed diet. . . a standard by which all diets can be measured."" For each category, Null Sets out how the nutrient works in the body; explains what's wrong with our diet in that area (our meat supply, besides being inherently unhealthy because of fat content and other considerations, is polluted with hormones, antibiotics, and pesticides); and then suggests what may be better (a well-balanced, vegetarian diet). Much of this is based on still-tentative research findings--with Null, for one thing, jumping eagerly on the supplement bandwagon. (""Even if you don't suffer from acute mental illness, you may find additional vitamin B helpful to your state of mind."") Practical advice is scanty, so this is chiefly for the Null following and others attracted to the point of view. For practical guidance, look elsewhere--Jane Brody is fine.
