Whether viewed as a cookbook or as a blend of history, the art of cookery ood recipes, this is an exceptional book, good reading- and we feel safe in assuming- good cookery. On the side of appearance it is also distinguished by charming two one sketches by Jo Spier- 375 of them, and 16 full pages, four color illustrations. On the practical side, this reader found the arrangement of ingredients and procedure direct, easy to follow. The first section gives as interesting a history of the spice trade and the individual herbs and spices (in alphabetical order) as can be recalled. The recipes- some 1400 of them- are prefaced, section by alphabetical section, with pertinent remarks, hints, warnings on how to get best results. All in all invaluable addition to the cookbook as well as the library reference shelf, although confessedly, price and size may prove deterrents.
