For young neophytes or those who regard themselves as thoroughgoing idiots in the kitchen, explicit menu-and-recipe cookbooks like this one with its lie-flat 11"" x 8(apple)"" format are useful-for entertaining particularly. Though not all promises to spell out processes are kept (how to shuck a clam or just how to make bread crumbs in a blender) the recipes are standard, mainly Continental-biased, fare, the menus serviceable and attractive. Incidental intelligence for each recipe is given in small type and there's an appendix for techniques and measurements.
