 Killeen and Germon are the founding owner-chefs of the much- praised Al Forno restaurant (Providence, Rhode Island)--and this rather slight collection (150 recipes) consists of Al Forno dishes in quantities suited to home cooks. (In fact, that might be the scale on which the restaurant cooks as well, as all dishes including the dessert ice creams are made to order.) In addition to his grilled pizzas and her fine desserts, both famous, it includes vervy soups, salads, pastas, grilled and roasted vegetables, and a good sampling of special oils and condiments--uncomplicated, emphatic fare of the new Italian-American variety that we really need no more items for except that these are so brisk and irresistible.
